Cascara – with Ginger & Cinnamon
Let the captivating aroma of cinnamon, the fruity flavour of cascara, and a touch of warming ginger make even the coldest day feel cozy.
This time, we added cinnamon and ginger to our cascara, creating a fragrant, spicy combination inspired by the drink "qishr", which has been traditionally drunk in Yemen for centuries. "Qishr" is an important drink in Yemeni culture, enjoyed during family gatherings or feasts and is often preferred over coffee. The preparation of "qishr" is simple: mix cascara with spices, pour over hot water and let it steep, or put the mix in hot water and cook. The finished drink is served warm, ideally in smaller cups. It has a tea-like character, contains less caffeine than coffee and can be flavoured with cardamom, cloves, sugar or honey.

How to prepare Cascara – with Ginger & Cinnamon?
- As a hot drink: Add 8 g of the drink mix (3 teaspoons) and pour over 200 ml of hot water (around 90°C). Let it steep for 8-10 min. and then strain through a sieve.
- As a cold brew: Add 10 g of the drink mix (4 teaspoons) and pour over 200 ml of water. Put in the fridge and let it steep for 15-16 hours. Finally, strain through a sieve and, voilà – your cold brew is ready.
